About Our Nursery

Celestial Sprouts and Shoots LLC was established in the Summer of 2020, after founder Eric “Taco” Olmstead found himself at a crossroads caused by COVID-19.  With the music industry failing, Taco decided to leave his job as band manager and go back to his childhood roots–farming.  He went to work for his friend Rob Young at Young Harvests Farms and his passion for growing was re-kindled. Taco already had an interest in organic nutritious foods stemming from caring for his wife, Elise, who was diagnosed with breast cancer in 2018.  He learned about the cancer-fighting nutrition in microgreens along with the other multitudes of nutritional benefits, but noticed a lack of availability and variety in the market.  Now armed with more farming knowledge and passion than ever, he decided to take on a new project in his Shepherdstown home and grow his own sprouts and shoots in extremely small batches of changing varieties.  Celestial’s microgreens are cultivated with the utmost love and care with all natural, organic materials, ionized water, and even compostable packaging and marketing materials printed at a local print shop powered by solar.
